Chicken and Cranberry Salad

We’re very fortunate that we have great local farmers markets near here that do really good organic chicken for an exceptionally good price! And you can really taste the difference. So, here’s a recipe for chicken and cranberry salad which uses that chicken:

Ingredients for 2

1 bag of mixed salad leaves

10 cherry tomatoes, halved

1 large (or 2 small) chicken breast, shredded

1 inch cucumber, cubed

1 tbsp. pumpkin seeds

1 spring onion, chopped thinly

1 tablespoon dried cranberries

Sprinkle olive oil

Sprinkle balsamic vinegar

(Optional – 1/2 stalk celery chopped thinly)

 

Method

  • Open the bag of salad and split it between 2 plates
  • Place all of the other ingredients on top, half each
  • Sprinkle your preferred quantity of olive oil and balsamic vinegar over the salad
  • Enjoy!

How easy is that? Healthy food in no time at all! Eating well to support your health doesn’t take an age, just a little bit of effort!

When you get your cranberries try to buy the ones infused with pineapple juice and not just a sugar solution. I appreciate that pineapple juice is sugar too but at least it has trace amounts of bromelain which can help to reduce inflammation. Though, of course, you need to have it in higher quantities to reach a therapeutic level.
