If you fancy a salad but are fed up with one that is based on a green leaves this is a tasty alternative. Lentils, of course, are also a good source of protein so this will be more filling than you’re regular green salad. Make sure you prepare your lentils properly if bought dry. Soak them overnight to ensure you remove substances within them that make them difficult to digest.
It’s really quick and easy to make.
Ingredients – for 2 people
1 tin Puy lentils
½ Red onion – thinly sliced
½ Red pepper – chopped roughly
2 Tomatoes – chopped roughly
1 small handful Coriander
For the dressing
Orange juice – 3 tablespoons
Balsamic vinegar – 2 tablespoons
Olive oil – 3 tablespoons
Salt and pepper – to taste
- Open tin of lentils, drain, wash and put in a bowl
- Chop up the onion, pepper and tomatoes and place in the bowl
- Either shred by hand or roughly cut coriander with a knife and place in the bowl
- Mix the dressing and put it in the bowl
- Toss the salad and enjoy
This can be eaten on its own or with a piece of fish or meat as a vegetable dish. It’s great as part of a healthy eating diet.
