Pepper & Courgette Frittata

Eggs are really versatile and are a quick easy meal to throw together but will still leave you feeling full. They can be bland if you don’t add plenty of flavours to make them more tasty so here’s a great little recipe to do just that…

Ingredients for 2 people

4 eggs, whisked

1 courgette, sliced

1 sweet potato, sliced thinly

1 red pepper, sliced into strips

1 small onion, chopped

1 glove garlic, crushed

small handful chopped parsley

2 handfuls mixed leaves

2 tbsps. mixed seeds

8 cherry tomatoes, halved

1 tbsp. coconut oil

1 tbsp. olive oil

1 tbsp. balsamic vinegar

 

Method

  • Fry off the onion and sweet potato until the onions are clear and the potato lightly browned (make sure the potato is thin enough to cook this way – alternatively you can part boil it before frying it)
  • Add in the courgettes, garlic and pepper and fry them off too
  • Add in the whisked eggs and parsley and cook until firm
  • You may need to pop the pan under the grill to firm off the top
  • Serve with a handful of mixed leaves, 4 halved cherry tomatoes each, 1 tbsp. mixed seeds and dress with olive oil and balsamic vinegar
  • Enjoy!
