Prawn Salad

This was an unexpected delight from the local fishman today! Every Wednesday a fishvan arrives outside our house so we can buy freshly caught fish and buy it on our doorstep, what a great idea! Anyway, prawns were a new addition this week so we felt compelled to have a pot and although it is certainly not the weather for a salad this was our chosen lunch.

A very easy lunch to make…

 

Ingredients for 2

1 bag of mixed salad leaves

10 cherry tomatoes, halved

20 prawns

1 inch cucumber, cubed

1 tbsp. pumpkin seeds

1 tbsp. sunflower seeds

1 spring onion, shredded

2 tbsps. mayonnaise

1 tsp paprika

Sprinkle olive oil

Sprinkle balsamic vinegar

 

Method

  • Open the bag of salad and split it between 2 plates
  • Place on top the halved tomatoes, cucumber and seeds
  • Sprinkle your preferred quantity of olive oil and balsamic vinegar over the salad
  • Mix the mayonnaise with the spring onion and add the prawns, place these on top of the salad
  • Sprinkle over the paprika
  • Enjoy!
